Introduction

Ingredients

    1 1/2 cups granulated sugar
    1/2 cup baking stevia
    1 3/4 cups all-purpose flour
    3/4 cup unsweetened cocoa powder
    1 1/2 teaspoon baking powder
    1 1/2 teaspoon baking soda
    1 teaspoon salt
    1/2 cup egg white liquid
    1 cup skim milk
    1/2 cup unsweetened applesauce
    2 teaspoons vanilla extract
    1 cup boiling water

Tips

I find that the cake tastes great by itself, but a little dollop of light whipped cream with a strawberry on top might be nice!


Directions

1. Preheat oven to 350 degrees.
2. Use a pat of unsalted butter to very lightly "grease" a 9 x 13" cake pan, or use a light coating of baking spray.
3. Mix dry ingredients together in a large bowl.
4. Add wet ingredients to dry, and beat on medium speed for a minute or so. Mixture will be thin.
5. Pour mixture into cake pan.
6. Bake for 35 minutes, or until toothpick inserted in center of cake comes out clean.
7. Allow to cool for at least half an hour before serving.
