Introduction

Ingredients

    1kg lean minced beef
    Three tins chopped tomatoes
    Two small tins of tomato puree
    Two onions
    Three peppers
    Four tbsp olive oil
    Herbs - recommend oregano and basil
    Salt and pepper

Directions

Finely chop the onion and chop the pepper. Gently fry these in the olive oil until the onions are golden.

Meanwhile put the block of mince without any fat in another pan to brown over a medium heat. Coarsely break this up while it is cooking so you get nice browned lumps of meat.

When the mince is half done add the tinned tomatoes and tomato puree and heat through before adding the peppers, onions and the oil they were cooking in.

Add seasoning and herbs and simmer for 20 minutes.

You can then use this as a base for pasta dishes and cottage pie, add kidney beans and chilli powder and serve with rice for chilli con carne and while you're family is carbing it up have on its own with a salad.

Serving Size: Makes eight servings
