Introduction

Nothing fancy, just yummy. Geary can't chew the cabbage and carrots so I shred it much finer in my Ninja. Perfect for him to enjoy and it doesn't change the flavor or nutritional value. Ingredients

    4 1/2 cups Taylor Farms Coleslaw Mix (Sam's Club)
    1/2 upc Hellman's Light Mayo
    1 1/2 Tbsp. fat free Half and Half
    1/4 tsp. lemon juice
    4 packets Splenda
    1/8 tsp celery salt

Tips

When I have a cucumber on hand, I put it in, skin and all, with the veggies before shopping. The extra liquid from the cucumber makes the dressing too runny, so I omit the half and half.


Directions

Measure coleslaw mix into Ninja, doing about 1/4 at a time. Pulse 5 quick times to insure fine shred. Mix together in a separate bowl the mayo, half and half, lemon juice, Splenda and celery salt. Pour over prepared coleslaw and mix well. Refrigerate to blend flavors and enjoy!

Serving Size: Makes 4 - 1/2 cup servings.
