Ingredients

Pork, fresh, top loin chops, boneless, 4 chops
Onions, raw, 1 medium diced
Organic Cream of Mushroom Soup, 1 box
Brown rice (1 cup cooked), 3 serving
Tips
For a quick lunch, cut the chops in to bite size pieces, divide the rice in to four containers, cover with the meat and 1/4 of the gravy, stir. Reheat in a microwave.
Directions
First start the rice if using long cooking brown rice.
Trim the excess fat from the chops. In a large frying pan saute the fat pieces to create some drippings and then discard the fat. Pan sear the chops on both sides. When you begin searing the second side of the chops add the onion to the pan and saute it for a few minutes. Then spoon the mushroon soup on top of each chop, cover the pan and simmer for 10 - 15 minutes. Stir everything in the pan, cover and simmer for another 15 - 20 minutes. Check to see if the meat is done. If it is divide the rice on to four plates and cover with the meat. Stir the remaining items in the pan to loosen any thing stuck to the pan and create a thick gravy. Cover each plate with 1/4 of the gravy.
