Ingredients

    1 15 oz can sweet potato puree
    1 13 oz can Native Forest Classic coconut milk
    2 eggs, lightly beaten
    1 tsp nutmeg
    1/4 tsp ginger
    Butter to coat ramekins

Tips

This will not set as firmly as pumpkin pie made with milk and sugar but has a delicious creamy texture. Serve with whipped cream if desired. Use less stevia for a savory side dish.


Directions

Preheat oven to 425F. Mix all ingredients but eggs. Use stevia to taste - 3 droppers makes a moderately sweet dessert. Add eggs after tasting. Wipe inside edge of ramekins with butter to prevent top edge from sticking. Place in water bath. Bake for 15 minutes, then turn oven down to 350F and bake an additional 45 minutes.
