Introduction

I make this and divide up to take to work for my lunch. It makes lots, freezes well, and tastes really good. I make this and divide up to take to work for my lunch. It makes lots, freezes well, and tastes really good.

Ingredients

    8-10 fresh zucchini, small to medium
    2 yellow onions
    three 14.5 oz.cans fire roasted diced tomatoes
    three 15 oz.cans cannellini beans (white kidney beans), drained and rinsed
    1 1/4 cups shredded mozzarella cheese

Tips

I tried adding cheese while it was cooking, but for some reason it works better to add the cheese after baking.


Directions

Using a food processor, slice zucchini and onions. Put them in a casserole dish or two. Add 1.5 cans of tomatoes and 1.5 cans of beans to each casserole dish. Bake at 350 for about 45 minutes.Stir once or twice during cooking. When cool, divide into ten containers, top with 1/8 c. cheese and freeze.
