Introduction

My entire family loves this recipe. It's wonderful on a cold day. My entire family loves this recipe. It's wonderful on a cold day.
Number of Servings: 10

Ingredients

    3/4 lb extra lean ground beef
    1 cup diced onion
    1 cup diced celery
    3 cups water
    1 large diced potato
    1 cup chopped or sliced carrots
    1 cup frozen corn kernels
    2 cups frozen green beans
    28 oz can diced tomatoes
    1 tsp salt
    1/4 tsp black pepper
    1/4 dried basil leaves
    2 tsp bottled brown boquet sauce

Directions

Lightly spray large pot with cooking spray.
Put ground beef, onions and celery in pot.
Cook over medium to medium-high heat until ground beef is browned and vegetables begin to soften.
Add water, potato, carrots, corn, green beans, diced tomatoes, salt, black pepper, basil leaves and bottled brown boquet sauce.
Stir to combine.
Heat under high heat until soup begins to boil.
Reduce heat to simmer and cover the pot.
Simmer for 30-45 minutes.

    "Brown Bouquet" sauce refers to Kitchen Bouquet, which is used as a gravy base sometimes. It's old-fashioned and when I don't have enough "scrapings" after roasting meat to properly flavor a gravy, I'll use KB. It is decidedly NOT a BBQ sauce! - 4/5/08

    I brown the ground meat, drain it throroughly in a colander & return it to the pan with the veggies & seasonings, brown it all together for added flavor. I disguise spinach by chopping it very tiny. Baby limas, turnip, parsnips are tastey, too. Sometimes I thickened with flour & fat-free 1/2 & 1/2 - 7/1/08

    I have eaten this soup since I was little, my grandma used to make it every week! When I was big enough to reach the stove she taught me her recipes and this is one of my favorites. She sometimes put in a handful of pasta or rice. She varied the veggies depending what was ripe in the garden that day - 7/1/08

    A nice hardy soup. Didn't have green beens on hand but you can add whatever veggie you like. I added some cubed butternut squash to the recipe along with some beef boullion for extra flavour and served the soup with grainy bread. Hubby really liked it! - 5/1/10

    This was very good without any extra seasoning like the 'bouquet' . I left out the green beans and tomatoes because I am not fond of them there was plenty of vegetables for me in it all ready. My first SP receipe!! next Grape Salad :-) - 12/4/08

    I substituted ground beef for ground chicken, omitted the carrots as we don't really care for them and instead of the brown bouquet I put in some chicken gravy mix. It was such a hit that even my daughter's friend had 2 bowls, my neighbor tried it and took some home and it was all gone that night. - 4/14/08

    This has always been a budget stretcher in our home! Other additions are cumin, chili pepper, and chili beans to make Cowboy Soup. Ground turkey and poultry seasoning gives it a fall flare with a bit of squash and turnips. Italian seasoning, oregano, and garlic for a more Mediterranean flavor. - 1/23/16

    I love this soup - I use reduced sodium Better Than Bouillon (BTB) Beef or BTB Mushroom rather than water and skip the brown bouqet sauce and it is awesome. - 12/18/16

    I use ground turkey breast when my daughter comes for a visit and it tastes delicious. I grew up with chopped lean stew meat being used in a soup. During the summer, its nice to get fresh vegetables from the Farmer's Market down the street from us, too! :-) - 1/23/16

    I have been making this soup for years now! For many years I tried and tried to make homemade soup but dishwater was probably tastier.LOL
    This was the very first soup I ever made that turned out!!We LOVE it.You can change the veggies to suit yourself and it's always GOOD.

    This has been a family fav. for years! I make it with lean ground pork, ground chicken, or ground turkey, and I love how easy it is to adapt it to different veggies. It's a very forgiving recipe. Love this stuff! - 7/1/08

    In New Zealand we grew up with this as one of the main meals of the week. It was simply called Mince (our name for ground beef) This is great frozen in tubs and can be thawed & heated up quickly with some toast or some frozen vegetables on the side for a quick meal during the week ! - 4/5/08

    Instead of adding ground beef, I thought I would try Morning Star veggie crumbles. I added some minced dried onion, 2 tbsp worchestire sauce and some garlic salt. I also added a couple cans of Campbell's Healthy Minestrone soup for some added fiber. Veggie crumbles are great in spagetti also. - 4/5/08

    I keep frozen chopped onions, peppers and celery in freezer. I usually purchase ground beef in large package and fry up and freeze for single use. I would have to peel and cut potatoe and carrot and open can. Toss in crock pot on low before leaving for errands. This is always warm and good - 11/20/19

    I make this soup using link sausage, such as Hillshire Farm. I slice the sausage into thin rounds and brown them. Then put all ingredients in a crock pot and cook. Also I sometimes I use a little V-8 low sodium in place of some of the water. - 11/13/19

    This is very good. I do add garlic to mine and I also toss the carrots in with the hamburger , onions and celery to help them cook faster. If it is too thin, I will add pumpkin for an extra veggie and it will not change the taste. (I add pumpkin to chili too.) - 11/17/18
