Introduction

Ingredients

1lb dry black beans
1 medium onion, chopped
1lb polska kielbasa smoked sausage, sliced
6oz tomato paste
1tbsp garlic powder (or 1 clove fresh garlic, minced)
2 cups white rice, cooked
Salt and pepper to taste
Directions
* Soak beans overnight and drain.
* In a large, deep pan, add the beans and cover with water. Add onion, garlic, salt and pepper. Cook until beans are soft. Add water if needed. When beans are cooked there should be just enough water to cover them.
* In a large skillet brown the polska kielbasa sausage and drain any excess fat.
* When beans are cooked add the tomato paste and sausage. Cook additional 15-20 minutes.
* Meanwhile, cook the rice in a separate pan. Once cooked, add to the bean and sausage mixture and stir well.
Serving Size: Makes 8 1 cup sevings
