Introduction

I took the Baked Egg recipe and used Southwestern Egg Beaters instead of the eggs. Diced up the ham and stirred it all together then baked in muffin cups for easy portable breakfasts. Ingredients

    1 /2 C. Southwestern Egg Beaters
    1/2 C. shredded 2% cheese (I used cheddar and Mexican)
    1/4 C. diced extra lean ham

Tips

I can make these up on Sunday and have breakfast all week. I keep these on hand so I don't drive through McD's on the way to school.


Directions

Preheat oven to 350. Place 6 muffin cups in muffin tin and spray with Pam. Mix all ingredients together add salt and pepper if desired. Evenly divide between sprayed muffin cups (about 1/3 cup per muffin cup). Bake for 10-15 minutes depending on how done you want your eggs.

Serving Size: makes 6 individual quiches
