Ingredients

    1lb lean ground beef
    Pepper to taste
    Garlic powder to taste
    1/2 onion, finely chopped
    1 package Campbell's Fire Roasted Tomato Skillet Sauce
    1 can beef broth
    2.5 cups frozen mixed vegetables (I like Birds Eye peas, carrots, green beans & corn mix)



Tips

Serving Suggestions:
- Eat with a salad and baked potato for a fast, healthy meal
- Goes well with grilled cheese for a hearty winter lunch
- Make it more substantial by adding noodles (penne or rigatoni would hold up well) or serving over brown rice
- Convert this to a chili by seasoning the beef with paprika, cumin & red pepper flakes, and substituting the mixed veggies for black or pinto beans.


Directions

Chop onions and add to skillet with ground beef. Sprinkle with pepper and garlic powder to season. Break up the meat with your spatula and cook until just browned, then set skillet aside.

Put vegetables in a large pot with beef broth. Cook on med-high and bring to a boil. Then, add the beef mixture and the tomato sauce. Bring to a boil again. Then simmer on low-med heat for 10 more minutes. Now it's ready to serve!
