Introduction

Ingredients

    3 Cups White beans
    1 Can Tomatoes - diced - with juice
    725 gr Sweet potato (1 large) - diced
    250 gr Pumpkin. - diced
    1 Onion - diced
    1 tbspn Chili powder
    1 tbspn Cocoa powder
    1 tspn Cumin
    1 tspn Garam Masala
    1 tspn Rosemary
    1 Cup Water

    1 Cup Instant Minute Rice (added last)

Tips

I cook white beans from scratch but you can also use 1 Can (16oz) White beans - rinse.


Directions

Spay crockpot. Cut sweet potato, pumpkin and onion. Add to crockpot and mix with white beans.
In a separate bowl, mix spices with tomatoes. Add to veggies. Add water. Cook at low for 6 - 8 hours.

Collect one cup of chili juice and mix with 1 cup Instant Minute Rice. Cook in the microwave for 4 1/2 min. Add rice (cooked) to chili, mix well and serve...

Serving Size: 8 servings - 1 cup bowl

    Very Good
    This is a really good dish and great on a cool autumn night! I skipped the pumpkin, simply because I didn't have one. The spices don't overwhelm the dish; some diners may wish to add a bit, or add some salt or pepper. I'll make it again! - 11/30/16
