Ingredients

    Boneless skinless chicken breast (1 lb)
    1/2 bag fresh spinach
    1 box of no salt chicken stock
    1 can no salt diced tomatoes
    3 carrots
    1 onion, diced
    2 bell peppers, rough chop

Directions

Add all ingredients to a slow cooker set on LOW. Cook for 8 hours. 1/2 an hour before it's finished, take out the chicken breasts, shred and return to slow cooker.
