Ingredients

    1 Lb Turkey, ground
    2 Tbsp Oil, Sunflower or Canola
    1/2 C Onion, chopped
    1 C Carrot, chopped
    1/4 C Celery, chopped
    15 oz Tomatoes, diced (can)
    2-3 C Water
    1 C Green Beans
    1 C Lima Beans
    1 C Corn
    1 C Cauliflower, chopped
    1 C Broccoli, chopped
    1 C Zucchini, chopped
    1-1/2 C Cabbage, chopped
    2 C Vegetable Juice (like V8)
    1 Tbsp Parsley, dried
    1 Tsp Sage rubbed
    2 Tsp Paprika hot or sweet
    2 Tsp Oregano, dried
    1 Tsp Garlic powder
    1 Tsp Black Pepper
    1 Tsp Salt

Tips

All vegetables can be frozen or fresh. Vegetables and seasonings can be changed to suit your taste. Freezes very well.


Directions

Brown TURKEY in pot, remove to bowl. Add OIL to pot then ONION, CARROTS, CELERY, saute, stirring until onion is soft. Add TOMATOES and WATER, scraping bottom of pot. When liquid is hot add remaining ingredients and reserved TURKEY. Add more WATER if needed to almost cover ingredients. Cover and simmer 20 minutes or until vegetable are desired tenderness. Adjust seasonings.

Serve hot over noodles or rice, if desired.
