Ingredients

12 large eggs
1/4 cup skim milk
1/4 tsp. black pepper
1 cup shredded cheddar cheese
3 slices Canadian bacon, diced
1 cup fresh spinach, chopped
Tips
You can add anything you like to these. Green onions, broccoli, peppers... use your imagination!
Directions
1. Preheat oven to 375 degrees.
2. Line muffin tin with paper liners, then spray liners with nonstick spray.
3. In a bowl, whisk together eggs, milk, and pepper.
4. Layer bacon, spinach, and cheese in each muffin cup. Each cup should be about 2/3 full.
5. Pour egg mixture into muffin cups, filling each to 3/4 full.
6. Stir slightly with a fork.
7. Bake at 375 degrees for 20 minutes, or until eggs have set.
8. Refrigerate for up to a week.
