Ingredients

    1 tbsp olive oil
    1/4 cup onion
    2 cloves of garlic, minced
    1 large acorn squashed (baked or microwaved until tender)
    15 grape tomatoes, chopped
    1 tsp cumin powder
    chipotle powder to taste (or chipotle in adodo)
    2 cups chicken stock
    2 cups skim milk
    salt and pepper to taste


Tips

A nice addition is roast acorn squash seeds on top. It adds some texture to the soup. They also contain lots of vitamins.


Directions

Prepare acorn squash. (I did 12 minutes in the microwave, but you can boil or bake too).
Sautee onion and garlic in olive oil. Add tender squash and tomatoes. Cook until the tomatoes start to break down. Add cumin and chipotle powder. Stir to combine well. Add broth and milk. Simmer for 15 minutes. Season to taste. Blend to desired consistency.
