Ingredients

Egg, fresh, 1 large
Banana, fresh, 1.33 cup, mashed (about 3 small - very ripe works best)
Kraft Mayo with Olive Oil (reduced fat mayonnaise), 8 tbsp (=.5 cup)
Flour, white, 1.5 cup
Granulated Sugar, 1 cup
Baking Soda, 1 tsp
Salt, 1 tsp
Walnuts, .5 cup, chopped
Tips
Start checking at about 50 minutes. May have to cook longer than 1 hour.
I cook mine in a preheated stone wear loaf pan at 325 for about 65 minutes. I have to pull mine out just a touch before it the knife comes out clean in the center (comes out clean in other places), because mine will continue to solidify in the pan as it cools (the stone wear pan keeps the heat for a long time).
Directions
Mix/whisk egg, banana, and mayo in one large bowl until smooth.
Mix flour, sugar, baking soda, and salt in another medium box until incorporated.
Pour flour mix into banana mix and stir until fully incorporated. Fold in nuts.
Bake at 350 in a loaf pan for about 1 hour until golden and a inserted toothpick or knife comes out clean.
Serving Size: makes 16 - 1 serving slices
