Introduction

Ingredients

    .5 cup agave nector
    .5 cup oil / .5 cup applesauce, unsweetened
    4 eggs
    2 3/4 cup whole wheat flour
    .5 cup flax seed
    2 tsp baking soda
    1 tsp ground cinnamon
    1 tsp ground nutmeg
    2 cups steamed or boiled pumpkin smashed
    (optional: raisins, dried cranberries or other things you may like to add)

Directions

preheat oven to 350 F. mix together agave, oil, applesauce, and eggs. In a separate bowl mix flour, flax seed, soda, cinnamon, and nutmeg. Alternate the pumpkin and dry ingredients and mix with a mixer until moist. Scrape into 2 bread loaf pans (oiled and floured) and bake for 60 min or until a toothpick comes out clean when tested in the middle.
