Ingredients

    1 Pound Pork Tenderloin
    1/8 Tsp Salt
    1/4 Tsp Black Pepper
    1/4 Cup Flour
    1 Tbsp Olive Oil
    1/2 Cup Marsala Wine
    1/2 Cup Chicken Broth
    1/2 Lemon, juiced
    5 Ounces Shiitake Mushrooms, sliced

Directions

1. Slice pork tenderloin into 1/2" thick medalions. Pound thin with meat hammer.
2. Mix flour, salt and pepper. Coat pork pieces with flour mixture.
3. Heay oil in skillet. Brown pork pieces on both sides, then remove from skillet.
4. Deglaze the skillet with marsala wine, then add chicken broth, lemon juice, and mushrooms. Cook until sauce reduces and mushrooms are tender.
5. Return meat to skillet, and cook for 5-10 more minutes. Serve 4 ounces of meat with approximately 1/4 cup mushrooms and sauce.

    Excellent! The pork lends itself very well to the Marsala, and Shiitake mushrooms are nice and sweet in the sauce. Delicious! - 1/13/13
