Ingredients

    2 eggs
    1 cup skim milk
    1/2 cup canola (vegetable) oil
    2 cups whole wheat flour
    1 cup white flour
    1 cup brown sugar
    4 tsp. baking powder
    1 tsp. salt
    1.5 cups blueberries

Tips

You can substitute in/out the wheat/white flour. You can also add more blueberries.


Directions

Beat eggs. Stir in the milk and vegetable (canola) oil. Mix in the remaining ingredients. Finally, mix in the blueberries. Fill muffin cup or grease muffin pan and fill each compartment.

Serving Size: Can make 12 or 24 depending on size of muffin
