Ingredients

    1 # ground beef, extra lean
    1# ground pork, lean
    2 to 3 eggs, beaten
    1 cup ricotta
    1 cup grated parmesan
    1 1/2 to 2 cups bread crumbs
    2 to 3 tbs. italian seasoning
    1 tbs. onion powder
    1 tbs. garlic powder

    spaghetti sauce of choice.

Tips

Browning in advance allows for easier turning while simmering in sauce.
These may be frozen prior to cooking, on a baking sheet and stored in a zipper freezer bag. Remove as needed. May thaw or start cooking from frozen state Adjust cooking time accordingly.


Directions

mix all ingredients together. roll by hand into medium sized meatballs ( between 1/8 and 1/4 cup).
Brown under broiler or in pan on stove top.
mix sauce with some water and pour over meatballs. cover.(I use 2/3 cup for full pan of meatablls)
Simmer meatballs for 15 minutes, then turn over and simmer for 15 to 20 additional minutes, until meatballs are cooked through

    Without browning they tend to fall apart. They would have gotten a higher rating if they were not so cheesy. - 5/7/13
