Ingredients

    2 Tbsp olive oil
    3 eggs
    1/3 cup spinach
    Sprinkling of black olives, chopped bell peppers, and chopped onions
    1/2 cup tomatoes, reserving half for topping

    NO Cheese

    Salt and pepper to taste

Directions

Saute vegetables in olive oil over medium high heat until soft. Add eggs. Cook until set, about 3 minutes. Serve topped with fresh tomatoes.
