Ingredients

1 & 1/2 C butter softened
3 C white sugar
6 large eggs, beaten
2 C whole wheat flour
4 C white flour
1 Tbsp baking soda
1 Tbsp Baking powder
1 Tbsp salt
4 C mashed ripe bananas
4 C banana granola crunch cereal
2 C coconut
2 C walnuts chopped
1 C sugar
3 Tbsp
Directions
Preheat oven to 350 degrees.
Prepare 4 loaf baking pans: Spray with non-stick spray. Mix together 3 Tbsp cinnamon with 1 C white sugar, then sprinkle cinnamon sugar mixture to cover sides and bottom of baking pans; set aside.
Cream butter and sugar, add eggs one at a time until smooth. Mix flour, salt, baking soda, & baking powder & beat in slowly to creamed ingredients, add banana when needed to keep mixture wet. With a wooden spoon, add remaining ingredients.
Spoon into prepared loaf pans then sprinkle tops of loafs with cinnamon/sugar mixture. Bake at 350 degrees or until knife comes out clean from the center. Makes 4 loaves, 12 slices each.
