Introduction

Ingredients

    3/4 cup organic sugar
    1/2 cup butter (slightly softened)
    2 eggs (slightly at room temperature)
    1 tsp. baking soda
    3 Tb. plain greek yogurt
    3 mashed bananas
    2 tsp. vanilla extract
    1 1/2 cups sifted all purpose flour
    1/2 cup pecans (optional)

Tips

You could easily stretch this recipe to 12 muffins but I like mine with a good mound. I fill up the empty muffin tins with water to help ensure even cooking.


Directions

Preheat over to 350 degrees. Mix butter and sugar in kitchen aid mixer w/paddle attachment; cream with eggs and vanilla extract until well blended. Add mashed bananas to butter and egg mixture. Add in yogurt and sifted flour with baking soda; mix well. Bake muffins for 15-20 minutes (check with tooth pick) every 3 minutes after the 15 min. mark if not done yet.
