Introduction

Ingredients



    2 cups Skim Milk
    1/3 cup Splenda Brown Sugar Blend
    1/4 cup Corn Starch
    2 large eggs
    1 cup Canned Pumpkin
    1/4 tsp. Salt
    1/4 tsp. Pumpkin Pie spice

Tips

This can be served with a little spritz of whipping cream, not included in the nutritional information.


Directions

Whisk milk, sugar and cornstarch in a large saucepan. Bring to a boil. Boil for 3 minutes, whisking constantly. Beat eggs with a whisk in a lasrge bowl. Gradually add half the hot milk mixture to the beaten eggs. Return the milk egg mixture to the saucepan. Cook over medium heat for 3 minutes or until thick, whisking constantly. Remove from the heat and stir in pumpkin and spice and salt. Spoon evenly into 6 6ounce custard cups. Let cool and chill for about 30 minutes or until pudding is set.
