Ingredients

1/4 t. salt
1/4 medium onion
8 oz. thin spaghetti
1 T. butter
1/8 c. chicken broth
1 egg
1/4 lb. bacon (I use turkey bacon)
1/4 c. finely chopped parsley
1/8 c. grated parmesan cheese
Directions
1. Bring water to boil for spaghetti. While waiting, cut bacon into 1-inch pieces, chop onion, & set out other ingredients.
2. Cook spaghetti according to package directions. Brown bacon in skillet, remove, pour all but 2T of fat from skillet (or substitute olive oil if you use turkey bacon). (I usually microwave my bacon because it's easier.) Add onion and saute until soft, then return bacon to skillet.
3. Drain spaghetti, add to onions and bacon. Add butter, toss with spaghetti until melted. Add chicken broth. Stir to mix well.
4. Remove skillet from heat. Add egg, stirring in quickly to blend. Mix in parsley & sprinkle on cheese. Toss well until cheese is evenly distributed in spaghetti. Serve.
Alternatives: use low-sodium or certified organic chicken broth, no salt butter, turkey bacon for healthier options according to your dietary needs.
