Number of Servings: 8

Ingredients

    12 ounces chicken breast cut up
    1 Tbs Olive oil
    1 Onion
    2 Asian Pears
    8 oz. Shitake Mushrooms
    2 Tbs high quality curry powder
    2 Tbs rice flour
    1 C chicken stock
    1 Tbs Mango Chutney
    1/4 C half and half

Tips

Garnish with parsley or cilantro. Serve over rice. Add chutney, peanuts, currants or grated coconut for toppings!


Directions

heat oil and brown chicken. Add onions cover and cook til chicken is done. Remove chicken and onion from pan. Add curry and flour, cook for 3 minutes. Add stock,chutney and cream. Cook stirring constantly until thickened. Return chicken and onion. Add mushrooms and pears. Heat through
