Ingredients

    4 eggs
    1/4 Cup Sargento Reduced Fat Mexican Shredded Cheese
    3 ounces baby spinach
    2 medium sized mushrooms, sliced
    2 tbsp. scallions chopped
    1/2 cup tomatoes, chopped
    3 Mission Carb Balance Tortillas, fajita sized
    1/2 avocado sliced and diced
    Salsa, add on top of taco

Directions

Chop up all veggies except for avocado and saute with a little cooking spray. Scramble 4 eggs and add 1/4 cup cheese and cook with sauteed veggies. When cooked, add sauteed veggies to heated tortilla and add chopped avocado on top along with salsa.

Serving Size: 1 tortilla and a third of the scramble
