Introduction

Ingredients

    1/3 cup sugar
    1/3 cup apple cider vinegar
    1/4 cup olive oil
    salt and pepper to taste
    1 can chick peas
    1 can cannelini beans
    1 can green beans
    1 can light or dark kidney beans

Directions

Whisk sugar, vinegar, oil and salt and pepper together in a medium to large bowl until the sugar is dissolved. Gently stir in drained and rinsed beans. Serve immediately, or make ahead and serve the next day. Flavor is best at room temperature, however.

Serving Size: Makes 8 hearty 1-cup servings or 16 1/2-cup servings
