Ingredients

Pumpkin, canned, without salt, 15oz can.
*Campbell's low sodium chicken broth, 1.25 cup
Milk, 1%, 1.5 cup
Garlic, 2 clove
Oikos Organic Greek Yogurt, Plain, 2 T.
Salt, 1 tsp
Pepper, black, .5 tsp
*Queso Fresco, Verole, 10 oz
Swiss Cheese, 1 cup, diced
*Argitoni Parmigiano Reggiano (grated), 1/4 cup
Great Value Rigatoni Pasta, 1 lb.
Olive Oil, 1tsp
**Dynasty Japanese Style Bread Crumbs, Panko, 0.5 cup
Directions
-preheat oven to 375 degrees.
-in large pot/saucepan, heat pureed pumpkin, milk, broth and garlic over medium.
-in separate pot, cook pasta per directions on package.
-add salt and cheeses (hold 2 T. reggiano for topping) to melt, stirring repeatedly.
-add drained pasta to sauce.
-use cooking spray to coat 9x12" pan and spread past mixture evenly.
-in a skillet, heat oil. add panko to toast. add remaining reggiano.
-sprinkle topping over pasta mixture.
-lightly spray top with cooking spray and cover with foil. place in oven for 25 minutes.
-serve immediately.
