1.5c buttermilk (i use skim milk with vinegar)
1c oats
.5c bran
3 tbsp ground flax
5 tbsp quinoa (cooked)
.5c white flour
.5c whole wheat flour
1tbsp cinnamon
1.5 tsp baking powder
3/4 tsp soda and salt
1 scoop protein powder
4 packets of stevia (to your taste)
.5 cup applesauce
1/4 cup peanut butter
3 egg whites
2 apples (shredded)
1/4 c peanuts
Directions
Preheat oven to 375 degrees.
Combine first 5 ingredients and let sit for 10 minutes.
Combine next 7 ingredients and make a well in the center.
Stir in applesauce, peanutbutter (melted) and egg whites.
Fold in pecans and apples.
Scoop into 12 muffin tins and bake for 18 minutes
