Introduction

Ingredients

    1c dry quinoa
    1 3/4c water
    4oz applesauce (snack size, unsweetened)
    1t cinnamon
    1/3c chopped walnuts
    1/2c dried cranberries
    2-3 medium sweet apples
    1T finely chopped mint
    1 lime
    1T honey

    Serves 8-10

Tips

If you buy bulk, this will end up costing you less than a dollar a serving!


Directions

Soak the quinoa for 15 minutes
Bring quinoa, water, cinnamon, and applesauce to a boil. Let it simmer for 15 minutes or until the water is evaporated.
Cool in fridge for an HOUR.
Chop the walnuts, cube the apples, squeeze the limes, drizzle the honey, mince the mint, mix in the cranberries and fluff the quinoa together. Voila!
