Ingredients

    1 can black beans
    .5 Large bag of spring mix or 1 small bag
    1 can sweet corn
    2 large mushrooms
    20 cherry tomatoes
    .5 jar of salsa
    .5 large purple onion

Tips

I would let this chill in the fridge at least a half hour. Since salsa is used you don't need dressing but if you would still like some I had this with some yogurt ranch chipotle dressing and it was amazing. They have healthy recipes to make your own with greek yogurt on the internet but this is also sold pre-made at the grocery store.


Directions

I made this last night but didn't keep the salad bag so buy a small bag of spring mix use the whole thing and dump in a bowl. I grabbed a large bag and just used half.

*put your salad in a large bowl
*drain and rinse beans and toss in
*drain and rinse corn and toss in
*chop your mushrooms and onions and toss in
*throw in your cherry tomatoes
*toss with salsa

Serving Size: makes 6 servings, 2 cups per serving
