Recipe a friend of mine started and I changed to lower the calories. You can, if you choose, serve w/brown rice or tortillas but those are NOT included in this calculation. Ingredients

    8 4oz portions of boneless skinless chicken breast (fat trimmed)

    8 oz light sour cream (I use generic brands)

    1 cup cream of celery soup (condensed)

    1 cup salsa (I buy the fresh salsa or make it myself)

    1/2 a medium sized red onion

Tips

This is, obviously, a very low carb meal so for my children I make brown rice to go with it or serve it on/with whole grain tortillas. If you want it can also be wrapped in a tortilla and topped w/red enchillada sauce and cheese but, of course, that will add carbs and such to the recipe.


Directions

Mix all wet ingredients in a bowel, mix well. Pour enough of the mixture in your slow cooker to cover the bottom so the chicken doesnt stick. Add raw chicken to slow cooker, top with remaining sauce. Cook for 4 hours on high or 6 on low, depending on your slow cooker.

Serving Size: Makes 8 4oz portions + sauce
