Introduction

Forbidden rice is a black, slightly chewy short/medium grained rice that has a ton of flavor and nutritionally similar to brown rice. Ingredients

    1 cup dried forbidden rice
    2.5 cup vegetable or chicken stock
    0.5 tbsp butter
    0.5 medium shallot, peeled, and, chopped
    1 sprig thyme, chopped
    1/4 cup white wine
    1/8 cup fresh parmesan cheese, grated
    salt (if needed)
    pepper

Directions

In a saucepan, melt the butter over a medium heat and sauté the shallots until translucent, about 5 minutes. They should not brown. Add the forbidden rice and cook for another minute, stirring well so that the rice is coated with butter and shallots. Deglaze the pan with the wine and stir constantly. When the wine is all reduced, reduce the heat to medium-low and add the warm chicken stock, ½ a cup at a time. Continue to stir the rice while adding the rest of the stock.
When the rice is cooked, after about 20 to 25 minutes, add the grated parmesan, the fresh thyme and season to taste.
