Ingredients


    Ingredients:
    Wheat flour, white, all-purpose, unenriched, 1.5 cup
    Old Fashioned Quaker Oatmeal- Plain (1/2 cup dry)
    Salt, .5 tsp
    Cinnamon, ground, .5 tsp
    Nutmeg, ground, .25 tsp
    Baking Soda, .5 tsp
    Baking Powder, 1.5 tsp
    Blueberries, frozen (unsweetened), 1 cup, unthawed
    Banana, fresh, 1 small (6" to 6-7/8" long) (diced)
    Brown Sugar, 2/3 cup, unpacked
    Egg, fresh, 2 large
    Yogurt, plain, low fat, .75 cup
    Flax Seed, 3 tbsp

Tips

Feel free to substitute any fruit or veggie. Zucchini & apple or carrot & apple or banana & strawberries are all good combinations.


Directions

Combine dry ingredients in a medium size bowl. Combine wet ingredients in a small bowl, pour into the large bowl and mix well. You may have to add a little water, if the mixture seems dry. Pour into regular muffin tins and bake for 15-20 minutes.
