Introduction

this is a vegetarian recipe i found on another website this is a vegetarian recipe i found on another website
Number of Servings: 15

Ingredients

    2 cups dry adzuki beans
    2 large onions sliced
    4 cloves garlic minced
    4 medium carrots diced
    1 red pepper diced
    1 cup basmati rice
    1 large can diced tomatoes
    2 T vegetable oil
    1/2 t cinnamon
    1-2 T salt
    1 T black pepper
    2 T cumin
    and if you have them:
    1/2 t paprika
    2 T corianer
    1/2 t turmeric

Directions

Soak beans in warm water for at least 4 hours. Remove old water, rinse beans and put beans in pot with 5 cups clean water. Boil 40 minutes, add 2T salt and boil 15 minutes til soft. Drain.

Prepare rice as directed

Heat oil. Add spices and stir. Add onions, carrots, red pepper. Add adzuki beans and tomatoes. Fill tomatoe container with water and add. Stir, cover and simmer 10minutes. add rice and stir well. simmer 5 minutes. leave covered to soak up water.

Serving Size: put in 15 equal sized tupperware containers
