Ingredients

    2 Cloves Garlic, minced
    1-2 Tbsp Extra Virgin Olive Oil
    1 Tbsp Lemon Juice
    1 Tbsp Parsley
    1 tsp Salt
    1/2 tsp Oregano
    1/2 tsp Thyme
    1/2 tsp Ground Black Pepper
    4 Fillets of Salmon (approx. 5oz each)

Tips

You can also substitute 1tsp basil for the oregano and thyme. We served the fish on top of cooked spinach.


Directions

1. In a medium bowl, prepare marinade by mixing garlic, olive oil, oregano, thyme, salt, pepper, lemon juice and parsley. Place salmon fillets in a ziploc bag and marinate in the refrigerator for at least 1 hour, turning occasionally.

2. Preheat oven to 375 degrees F (190 degrees C).

3. Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in the glass dish and bake 35 to 45 minutes, until easily flaked with a fork.
