Introduction

Ingredients

3 hard boiled eggs (toss the yolks or give to someone else)
2 cups tossed salad (dress with ACV, herb sprinkle, salt & pepper)
1 egg, separated
pinch of cream of tartar
3t fat free dry milk
2T Truvia sweetener
1t vanilla extract
1t strawberry extract, optional (or lemon...or orange...the choices are endless!)
1 cup sliced strawberries
Tips
Recipe creator says: This will stick to the pan, but that's ok, just scrape the cake out. Also, I use Truvia (a mixture of stevia and erythritol) b/c to me stevia usually tastes a bit bitter when used for baking. But you can use whatever 0 calorie sweetener you like.
Directions
First make your salad with whatever greens and P2 veggies you like. Add 3 chopped egg whites. Dress with ACV, a sprinkling of favorite herbs, salt, & pepper.
To make the pound cake:
Separate yolk and white. In bowl with white, add a pinch of cream of tartar. Beat until stiff peaks form.
Now set aside the white and bring your beaters on over to the yolk. Beat the yolk with the Truvia and the extracts. Add the powdered milk little by little and beat. Your yolk should be nice and creamy and thick.
Fold the yolk mixture into the white mixture. Transfer to a small (miniature) loaf pan.
Bake at 350 for 20-30 minutes, depending on your preference of doneness.
Eat with sliced strawberries.
