Ingredients

    1 3 lb. pork loin roast
    1/2 c. apple juice
    1 can cranberry sauce (either kind)
    2 medium apples, coarsely chopped
    2 cups baby carrots
    1/8 tsp garlic
    salt and pepper to taste

Tips

Pork cooks quickly so check internal temp. This was done in a lot less than 6 hours, and I turned it to warm.


Directions

place apple juice, cranberry sauce, garlic powder, and chopped apples in crock pot. Mix well. Salt and pepper roast. Add to crock pot. Turn once. Pick up some of the sauce and put on top of roast. Add baby carrots and stir the edges so they get "saucy".

Cook on low in crock pot for no more than 6 hours

Serving Size: 12 3 oz servings of meat with sauce and carrots (meat loses some weight in the cooking process)
