Introduction

This is my fave salad. I chop up the ingredients every few days, then mix it as needed. Takes about 20 minutes to do the chopping, but then you have a ready-made salad for the next few days. Ingredients

    Baby Spinach
    Salad Greens- baby greens, 50/50 mix- no iceberg
    Bell peppers= green, red, yellow and orange, chopped into bits. I usually use about 1/4 pepper per cup of spinach
    Cucumber- peeled and cut
    One apple- my preference is Gala or Fuji- just enough sweet to offset the peppers but not too sweet
    Grape tomatoes- about 12 per 1 cup spinach

    I used to use cheese crumbles before I discovered I'm lactose intolerant. If you can have Feta or Bleu cheese crumbles, it is TOTALLY worth it.

    I think this salad is the perfect blend of flavors I like, I never even WANT salad dressing. Yum.

Tips

Play around with your favorite veggies and fruits to get just the right sweet/tart/neutral flavors YOU like.
