Introduction
Healthy and hearty chili perfect for cold nights. We like ours served over brown rice or alone. I puree the spinach raw with some water, I add other vegetables I have on hand as well to the puree so my kids still eat it. Leave in the crockpot all day on low for about 12 hours. Tips
This chili works well with any vegetable I have used in it, I have even replaced the beans with sweet potato puree and it has been delicious! It does not take the full twelve hours to cook, but that is how long I cook it for.
Directions
Puree any veggies you are using with water in a blender until mostly smooth. Add all ingredients to slow cooker except beans and cook on low for eight hours, add in beans and continue cooking for another four hours.
