Introduction

Healthy and hearty chili perfect for cold nights. We like ours served over brown rice or alone. I puree the spinach raw with some water, I add other vegetables I have on hand as well to the puree so my kids still eat it. Leave in the crockpot all day on low for about 12 hours. Ingredients

    Ground turkey, 93% lean, 8 oz
    Ground beef, 93% lean, 8 oz
    Beef broth, bouillon, consomme, 2 cup
    Beans, black, 1 15oz can rinsed
    Beans, pinto, 1 15oz can rinsed
    Beans, red kidney, 1 15oz can rinsed
    Celery, raw, 1.5 cup, diced
    Green Peppers (bell peppers), 0.5 cup, chopped
    Garlic, 3 cloves
    1 small onion, chopped
    Chili powder, 4 tbsp
    Salt & Pepper, to taste
    Cumin, 2 tbsp
    365 Organic Diced Tomatoes, 1 big can
    Green Chili Peppers, canned, .5 cup (Can sub in one can Rotel)
    Carrots, raw, 1.5 cup, chopped (Can puree raw as well)
    Spinach, fresh, 2 cup (Puree raw with water first)

Tips

This chili works well with any vegetable I have used in it, I have even replaced the beans with sweet potato puree and it has been delicious! It does not take the full twelve hours to cook, but that is how long I cook it for.


Directions

Puree any veggies you are using with water in a blender until mostly smooth. Add all ingredients to slow cooker except beans and cook on low for eight hours, add in beans and continue cooking for another four hours.
