    3 tbs Minced onion
    1 c diced celery
    1/4 c Cornstarch
    1 c 2% milk (Skim may be substituted for lower fat content)
    2 jars (12 OZ) Cheese spread (cheese whip or equivelent, I use Great value brand from walmart)
    1 tsp black pepper
    8 c diced potato
    4 c diced extra lean ham


Makes approximately 20 1 cup servings

In a 4 1/2 qt sauce pan place potatoes, onion and celery. Cover with water and boil until potatoes are tender. keeping enough liquid to just cover the potatoes, pour off excess.

In a bowl or mixing cup whisk cornstarch into milk until smooth. add cornstarch mixture and pepper to potatoes and cook on low-med heat until thickened. reduce heat to low, add ham and Cheese stirring until all of the cheese is melted. serve warm.

serving suggestions: I make this with a loaf of herb batter bread and a light salad.
