Introduction

This is a traditional summer lunch for us. It can be made with mince of any kind and the mince can be substituted for any vegetarian protein This is a traditional summer lunch for us. It can be made with mince of any kind and the mince can be substituted for any vegetarian protein

Ingredients

    500g lean mince
    2 Tablespoons taco seasoning
    2 cups tomato pasta sauce.
    1-2 cups corn chips
    1 cup lettuce shredded
    1 tomato finely diced
    1 carrot grated
    1 cup grated cheese
    4 teaspoons sour cream

Directions

Cook mince and when brown add 2 tablespoons taco seasoning and add one cup of tomato pasta sauce at a time, judging how running or thick you want it.
Place 1-2 cups corn chips on a plate and then top with the mince mixture.
This then can have shredded lettuce, finely diced tomato, grated carrot or any other vegetable you like on it, top with a small amount of grated cheese and a teaspoon sour cream.
