Ingredients

    1 lb. fresh pork roast - Cubed

    1 can Ro-Tel Diced Tomatoes and Chile Peppers

    1/2 cup Roasted green Chile can be mild, Medium or Hot.

    6 Medium Potatoes diced 2 inch squares. with or without skin

    1/2 Tsp Garlic
    (You May reduce Garlic to up to 1/3 tsp)

    Salt to taste aprox 1 tsp

    1/3 cup Onions (optional)
    onion salt or powder can also be subtituted.

    Water

Directions

Combine all ingrediance in a crock pot
Fill Crock Pot to an inch from the top with water.

cook for 6 hours.

    When I "fill it to an inch below top", won't that make it too watery if I am using one of the large crock pots? - 8/1/13

    Very Good
    After a recent visit to New Mexico I had to find a spark friendly recipe. This recipe was good. The only thing I added was cumin to add a little extra flavor. VERY generous servings so it worked out really well! - 2/3/11
