Ingredients

    1 small banana, very well mashed (enough for 1/2 cup)
    2 eggs

Tips

You can add in strawberries, mini-chocolate chips, nutella, peanut butter.
This recipe served 2 for me. I had 2 and my husband had 3.


Directions

Mash banana very well. Add in 2 eggs. Using a 1/4 cup pour batter onto prepped griddle. Cook until edges are dry. Flip and cook the other side. Pancakes will be flat.

Serving Size: Makes 4 to 5 pancakes.

    This is pretty good. I did use baking powder as well. I also added a little vanilla to the mix. Used some frozen blueberries and topped it with almond butter. Very tasty! - 1/27/16

    I did use 1/4 teaspoon baking powder to the mix to make fluffy pancakes. They were great with maple syrup. - 3/3/14
