Introduction

Spicy spicy carrot soup! Spicy spicy carrot soup!
Number of Servings: 10

Ingredients

    Carrots, raw, 4 cup, chopped
Onions, raw, 2 medium (2-1/2" dia)
    Lentils, 1 cup
    Ginger Root, 3 tsp
    Garlic, 2 cloves
    Cumin seed, 1 tsp
    Coriander seed, 1 tsp
    Chili powder, 1 tsp
    Ground tumeric, .33 tbsp
    Salt, 1 tsp
    Pepper, black, 1 tsp
    Allspice, 1 tsp
    Bay leaf, 2 pieces
    Vegetable Broth, 3.5 cup
Water, tap, 2.5 cup (8 fl oz)
    Cilantro, raw, 2 tbsp

Tips

Following original recipe led to it being very watery so I pureed it all, giving it a thick texture.

Also, this turns out to be very spicy - ended up mixing some milk into my bowl and some shredded cheese to lessen the spice.

Directions

In slow cooker combine all ingredients except for fresh cilantro. Cover and cook on low for 5 to 8 hours.
Discard bay leaves. Transfer 2 cups to a blender and puree, return to slow cooker and stir in cilantro.

Serving Size: Makes 10 bowls.
