Ingredients

1 cup Millet, uncooked
2 cups Water
1 tablespoon Olive Oil
1/2 cup Cucumber, peeled & diced
1/4 cup Carrots, finely diced
1/2 cup Broccoli, diced
1/4 cup Red or Yellow Bell Peppers, diced
1/2 cup Apple, diced
1/2 cup Red or Yellow Tomatoes, diced
2 tablespoons Cilantro, fresh, finely chopped
2 tablespoons Pine Nut, lightly toasted
2 tablespoons Black Raisins
2 teaspoon Salt
1 teaspoon Chilli Flakes
1/2 teaspoon Cumin Powder
1/2 teaspoon Coriander Powder
Directions
Rinse Millet in a fine sieve, bring water and millet to a boil in a medium size pot. Lower heat to low medium, cover pot and cook till the water is absorbed. Allow the millet to sit covered for a few minutes. Fluff with a fork.
In a medium skillet or pan, heat the olive oil, add all the carrots, peppers, broccoli, cucumbers & apples. Heat through for a few minutes. Turn off the heat. Add remaining ingredients and toss in the millet.
Mix well. Serve warm or cold.
Note: ingredients can be adjusted based on what vegetables are in your pantry.
