Ingredients

1/2 cup green lentils
1/2 cup french lentils
1 onion-chopped
2 garlic cloves- minced
2 tsp mustard seeds
1-2 tsp coriander seed-ground
1-2 tsp cumin seed - ground
1 1/2 cups water
13 oz can of coconut milk
1 tbsp olive oil
salt to taste
Tips
This goes great over rice or on its own. You can add a dash of fresh lime juice to it as well.
Directions
First, add the olive oil to a medium sized pan over medium heat. Add the coriander, cumin, and mustard seeds.
When the seeds start 'popping', add in the onion and garlic. Saute until the onions become translucent. Add salt as desired.
Next, add the lentils, water, and can of coconut milk. Bring to a boil, then reduce to a simmer and cover, stirring occasionally.
Cook for about 30-40 minutes until the lentils are tender.
Serving Size: Makes about 4-5 cups I think
