Ingredients

    2 cups all-purpose flour
    1/2 cup sugar
    1/2 cup shortening
    1/2 cup light molasses
    1 egg
    2 teaspoons baking soda
    1 teaspoon ground ginger
    1 teaspoon ground cinnamon
    1/4 teaspoon salt
    1/3 cup cold water
    raisins (optional)

Directions

1. Preheat oven to 400 degrees F. Grease cookie sheets (or line with parchment paper).
2. Sift together flour, baking soda, ginger, cinnamon and salt. Set aside.
3. Cream shortening and sugar together at medium speed. Add in molasses, egg and water and beat until well-incorporated.
4. Add in dry ingredients, scraping the bowl down as necessary. The cookie dough should be light and airy.
5. Drop mixture by rounded tablespoonfuls onto cookie sheets, at least 2 inches apart. If desired, add 4-5 raisins.
6. Bake 8 minutes or until top springs back when lightly pressed with a finger. Move cookies to wire racks and cool completely.
