Ingredients

    4 teaspooons of bacon fat
    1 cup cornmeal
    3/4 cup buttermilk or 3/4 cup mix of goat yogurt and goat milk
    1 eff
    1 tsp baking powder
    Half tsp salt
    Quarter tsp baking soda

Tips

Can substitute goat yogurt/goat milk for buttermilk for those who can't tolerate cow dairy


Directions

Heat bacon fat in 6 or 7" heavy iron skillet
Mix 1/3 cup cornmeal with 1/3 cup boiling water. Add remaining wet ingredients.
Mix dry ingredients, including rest of cornmeal.
Add dry ingredients to wet ingredients.
Add melted bacon fat to batter.
Pour back into heavy skillet.
Back at 450 for 25 minutes.
Turn on to rack to cool
